The famous mackerel or “chincho” is treated with exquisite detail to achieve a top quality product. They are cut and gutted manually, as tradition dictates. And later we add our homemade marinade made with olive oil and flavored with bay leaf and pepper.
Horse mackerel lovers will enjoy it accompanied by a slice of bread, with a good white wine.
