    Este cefalópodo, al igual que el pulpo, requiere un proceso de fabricación muy delicado, ya que además de un completo limpiado, exige un tratamiento de cocción con alto contenido en sal para recogir su punto.  Una vez que se ha dado la vuelta para completar su limpieza, se rellena manualmente y, a continuación, se elabora la salsa elaborada con aceite de oliva, cebolla y tomate, adquiriendo el color oscuro producido por la tinta del propio calamar.
